Super big chocolate muffins

Mmm, those soft muffins, super chocolate muffins, rich and spongy…
Ingredients
1 part
  • 300gr flour
  • 50-80gr cacao powder
  • 1 tb spoon baking powder
  • ½ t spoon soda
  • pinch of salt
2 part
  • 250gr brown sugar
  • 1 t spoon vanilla extract
  • 100gr melted butter
  • 250gr buttermilk (and we don’t have it in Russia!)
  • 2 eggs
  • 50gr chopped chocolate
Instructions
  1. Set oven to 200C (390F)
  2. Prepare cupcakes baking form, grease with butter and powder with flour (I got no cupcakes paper forms so if you do, just used them).
  3. Mix everything from the 1 part- set a flour mix aside.
  4. Mix everything from the 2 part and slowly add dry ingredients to wet, gently mix with spatula. You now may add a bit of chocolate, but I prefer not to do so.
  5. Pour the batter into the cupcake baking form liners, fill them completely, add chopped chocolate on top.
  6. Leave them in the oven for 15-18 minutes, do not overcook, check them with toothpick and it should go out almost dry, but with some moist pieces on it.
  7. I like to eat them cold or hot, with ice-cream, jams, fruits and berries, feel free to make your own way of eating those amazing muffins!
